Add the entire milk to a heavy bottomed saucepan. Place the milk on medium heat and stir occasionally so that it doesn't stick at the bottom. Boil it, then reduce the heat to low. Let the milk simmer for roughly 5 minutes. Once it has boiled, remove the milk from the heat and let it cool. The milk must be cooled to lukewarm temperature (about 110°F or 43°C). You may test the temperature by dipping your finger into the milk; the milk should be warm, but not too hot. Use 2 tablespoons of plain yogurt (you can use the previous batch or purchase some at the store). Add a bit of lukewarm water (a spoon or two) to the yogurt and mix it up to make a liquid, smooth mixture. This is done in order to dilute the yogurt so that it can be well blended into the milk. Once the milk has cooled to a lukewarm temperature, add the diluted yogurt mixture into the milk. Blend slowly to mix the yogurt with the milk. Make sure that it is well dispersed. Pour the milk into a clean container or clay pot (for old-fashioned flavor). Cover the container with a lid or a clean towel. Place the container in a warm, undisturbed place for 6-8 hours (overnight is best). The warmth allows the yogurt culture to ferment and thicken. After 6-8 hours, open the yogurt. It should be thick and have set to a smooth, creamy consistency. If you prefer the yogurt to be tangier, let it stand a little longer. Once the yogurt has set, keep it in the refrigerator and let it refrigerate for a couple of hours. This will make it thicken even more and become cooler and refreshing. If you want sweet yogurt, you can sweeten it at the mixing point or after the yogurt has set. Mango or berries, honey, or nuts may also be added in an effort to flavor it while being served.

 

Doi Bora Recipe 

In a bowl, take the plain yogurt and whisk it well to smooth out any lumps. Add sugar to the yogurt and mix well until the sugar is dissolved. Adjust the sweetness according to your taste. If using, add cardamom powder, rose water or kewra water, and saffron to the yogurt sauce. Mix well and set it aside in the refrigerator to chill while you prepare the fritter balls. In a mixing bowl, combine rice flour, all-purpose flour, baking powder, and a pinch of salt. If you like a slight sweetness in the batter, add 1 tablespoon of sugar.Add the dry ingredients gradually with slowly poured water and blend to smooth batter. Batter must be stiff enough to spread over the back of a spoon but not liquidy. You may add a hint of aroma of cardamom by incorporating the cardamom powder as flavoring, if desired. Heat oil in a deep frying pan on medium heat. You need enough oil to fully submerge the fritter balls. Once the oil is hot, drop small spoonfuls of the batter into the oil. Don't overcrowd the pan; fry in batches if necessary. Fry the fritters until they are golden brown and crispy on all sides. It should be around 3-4 minutes. Using a slotted spoon, remove the fritters from oil and place them on paper towels to drain excess oil. After draining and frying the fritters, coat each of them in the refrigerated yogurt sauce. Soak them for a few seconds and then place them on a serving plate. Fritters will get soaked in yogurt and turn soft and delicious. Serve Doi Bora cold when all the fritters are soaked in yogurt. Garnish with some additional cardamom powder, saffron strands, or even chopped pistachios for taste.

For extra flavor, you can add a little rose syrup or sugar syrup to the yogurt mix.

Let it simmer for about 5 minutes so that it gets thick a bit. Once the milk is boiling, remove it from the heat and let it cool to lukewarm temperature (about 110°F or 43°C). You can try it by inserting your finger in the milk; it should not be too hot but warm. While the milk is warm, add sugar and mix well till the sugar gets dissolved. Set the sweetness as per your requirement. If you want the intensity of the taste to be even more, a few strands of saffron or a couple of drops of rose water/kewra water can be added to the milk at this juncture. Use 2 tablespoons of regular yogurt (stored or the balance from the earlier batch) in a tiny cup. Combine some warm milk with the yogurt and make a creamy mixture. Now, add the yogurt mixture gradually to the heated milk and stir it well so that the yogurt culture spreads uniformly. Fill the milk in a clean vessel, preferably a clay or ceramic one for best flavor. Place the vessel in a warm place for 6-8 hours so that it solidifies. If the weather is chilly, you can place the container in a warm oven (not hot but with the light on) or near a warm window. Leave it for 6-8 hours. Test the yogurt. It will be creamy and thickened. If you prefer it more tangy, leave it to set for a little longer. Once you place the sweet doi, refrigerate and chill for 2-3 hours. It will also set and will be even refreshing. Serve the Sweet Doi chilled in small bowls or cups.

Optional Garnishes:

Cardamom powder: Sprinkle a pinch of cardamom powder on the top for more flavor.

Saffron strands: Add strands of saffron for an elegant look and aroma.
