Doi Recipe

Heat the milk in a pan with heavy bottom on medium heat. Stir the milk occasionally so that the milk does not stick and burn. Once milk begins to boil, bring the heat down and let it simmer for 5-10 minutes so that the milk thickens slightly. Place sugar in a different pan with a couple of tablespoons of water. Heat it over low heat while stirring constantly so that the sugar is dissolved. Once the sugar dissolves, increase the heat slightly to allow the syrup to boil. Simmer for about 5 minutes, or until the syrup has slightly thickened and reduced to a caramel-like consistency. If using cardamom or saffron, add it to the syrup for extra flavor. Stir, then allow the syrup to cool. Once the milk has thickened and the sugar syrup is ready, remove the milk from heat. Allow it to cool to room temperature (lukewarm). It is important not to add the yogurt starter to hot milk as it will kill the cultures. Remove the yogurt starter in a small bowl and add a little of the cooled milk to it to create a smooth paste. Gradually pour the starter mix into the rest of the cooled milk and blend nicely. Pour the cooled sugar syrup into the mixture of milk and yogurt. Stir gently until the syrup completely dissolves in the milk. This will give your doi the signature sweetness. Transfer the mixture to a clean container (traditionally, a clay pot is used to impart a rustic touch). Cover the container with a lid or clean cloth and keep it in a warm corner for 6-8 hours or overnight. The yogurt will set as the milk is fermented by the live cultures. The longer you wait, the thicker and more flavorful the doi will be. Once the doi has set and thickened, put it in the refrigerator for a few hours to chill. Serve chilled, garnished with chopped nuts, fruits, or a sprinkle of cardamom powder if needed for extra flavor.

 

 

Doi Bora Recipe

In a small pan, put sugar and water. Heat on medium, stirring occasionally until the sugar melts. Let the syrup simmer for a few minutes (5 minutes) until it gets slightly thick. Once the syrup is made, set it aside to cool down. In a bowl, combine gram flour (besan), rice flour, baking powder, and a pinch of salt. Gradually add water to make a smooth, thick batter (similar to pancake batter). Don't thin out the batter. Add oil in a pan and set it to medium heat. Once the oil gets hot, spoon the batter drop by drop into the oil. Fry dumplings until crispy and golden brown on both sides. Drain the excess oil using a slotted spoon and place the dumplings on paper towels. Whisk the yogurt (doi) well in another bowl until creamy. If it is too thick, you can add a wee amount of water to dilute it. Mix in the cardamom powder and sweeten with the sugar syrup added into it. Mix in until well combined. Once the dumplings have cooled slightly, toss them in the sweet yogurt mixture to ensure they are evenly coated.Let the fried dumplings soak for 15-20 minutes in the yogurt mixture so that they absorb the sweetness and are tender. Garnish Doi Bora with sliced nuts like cashew or pistachios to add more taste. Let the dumplings become soaked in the yogurt completely and serve them at room temperature or refrigerated. In another pan, heat ¼ cup of sugar on low flame until it melts and turns golden brown. Pour the caramelized sugar into the boiled milk and mix well. Add condensed milk (if using) and stir. Let the milk cool down to lukewarm temperature (around 40°C or warm to the touch) Mix 2 tbsp of plain yogurt (starter culture) into the lukewarm milk. Stir well to distribute the culture evenly. Pour the mixture into earthen pots (for an authentic taste) or any glass/ceramic bowl. Cover and keep in a warm place for 6-8 hours (or overnight) to set. The longer it sets, the thicker and creamier it becomes.  Once set, refrigerate for 2-3 hours before serving. Garnish with chopped nuts, saffron, or cardamom powder (optional).

Use full fat milk for a richer taste.

How To Make Tok Doi Or Sour Curd
