This is the water content in the butter evaporating. Cook Until the Milk Solids Settle.  Continue cooking the butter, and you will find that the milk solids (white curds) will begin to settle to the bottom of the pan. The butter will turn into a light golden liquid (your ghee). The ghee is complete when the milk solids are lightly browned and the air smells nutty. This should only take about 10-15 minutes. After the milk solids have turned color, take it off the heat. Let the ghee cool slightly (for 2-3 minutes), and then pour the ghee through a clean, dry glass container or jar with a cheesecloth or fine-mesh strainer. This will remove the final pieces of milk solids so that you are left with pure ghee. Let the ghee cool completely. The ghee will harden at room temperature.
