Cream Cheese Recipe 

Heat the Milk and Cream until it reaches about 82°C (180°F).

Add Acid to Curds and stir in lemon juice or vinegar slowly for 10–15 minutes. This will allow the milk to curdle and separate into curds (solid) and whey (liquid).

Blend the Curds and once most of the liquid has drained, transfer the curds into a food processor or blender. Finally Transfer the cream cheese to a container with a lid and refrigerate for at least 2-3 hours to firm up.

 

Mozzarella Cheese Recipe

Prepare Milk & Citric Acid and add Rennet. Cut and heat the curds to 41°C (105°F), while gently stirring. Pull and stretch curd like taffy; fold over itself as you go. Dip hands in hot water to help with stretch. Continue to stretch the cheese for 5-10 minutes, or until it's smooth, shiny, and elastic. Once the cheese is smooth, form into balls or logs-desired shape of choice. Finally, place mozzarella in bowl of ice water to cool and firm up for 15-20 minutes. Once mozzarella cheese has cooled sprinkle with noniodized salt to taste.

How To Remove Salt From Cheese

Soaking in Water or Milk

  • Cut the cheese into smaller pieces for better salt removal and soak the cheese in cold water or milk for 1-2 hours (or longer for very salty cheese).
